Spicy corn salsa

One of our favorite restaurants is Qdoba because of their fresh pico de gallo and corn salsa.  It has a slightly spicy flavor and adds a little heat to the meal.

One day after I got home from work, I went into the kitchen and got my homemade canned black beans and started cooking my version of "Spanish" rice -not at all like the real thing.

I looked to see what else I had to go with the rice and beans, and then it hit me! I looked up to see if I could find a good corn salsa recipe and they all looked so good, so I thought I will come up with my own recipe, I mean, it really is pretty basic, but when my family asks for more, then I know it's good!  You should know that this can be made by anyone, and I say that because I do not know how to cook, I can make stuff but it usually turns out either burned or a little undercooked.   So, when I make something that my family likes I feel proud of myself and I share it with you...

Ingredients:

  • 2 cups of frozen corn -room temp
  • 1/2 cup of green or spring onions -chopped
  • 1/3 cup jalapeño -chopped
  • 1 tomato -chopped
  • 1/2 cup of fresh lemon juice
  • salt -to taste
  • 2 tbsp. olive oil
  • 2 garlic cloves -crushed

Directions:

  • Mix onions, garlic, jalapeño, salt, lemon juice, olive oil, salt in a bowl
  • In a serving bowl, mix corn with tomato and then add previous onion mix.
  • Serve cold with chips or as a side dish with rice and black beans

When I was done cooking I asked Wes to try it and he said it was too spicy so I added more tomato.  The kids on the other hand said it was not spicy enough... so, I would say go with your taste bud and enjoy!

What I like about this is that it contains no soy oil, no green bell peppers, and it has no sugar -as many recipes called for sugar (still don't know why).  It is gluten free and vegan!
