Baked asparagus On one of our trips to our local produce market, Nana said: "Mommy, it's asparagus season". Since she outgrew her allergy to asparagus, I thought it would be a great idea to get a big bunch of fresh asparagus and as usual, we got fresh radishes, and our regular veggies and fruits.
Looking for a good way to cook asparagus without killing its nutrients and vitamins I went online and found that the sames recipe was repeated over and over again, well, at least the ones that required minimum cooking... Hmmm?? How could I change that? I mean, I had to make something that was gluten free, I wanted something fresh, something that the kids would actually eat. so here is what I came up with:
Gluten free - Vegan Baked Asparagus
Ingredients:
- 1 bunch asparagus (clean and trimmed)
- Juice of one lemon
- 1 Garlic clove (crushed)
- 2 tablespoons olive oil
- Salt, pepper, and dry oregano -to taste
Directions:
- Preheat oven to 350°
- Mix lemon juice, garlic, olive oil, salt, pepper, and oregano
- On a baking dish, place a sheet of aluminum foil and spread asparagus evenly
- Lightly brush the asparagus with the mix and cover with the aluminum sheet
- Bake for 15 minutes
Gluten free - Vegan Salsa
Ingredients:
- 1 bunch radishes (chopped)
- 1 green onion (chopped)
- 1 pearl onion (chopped)
- 2 celery sticks (thinly shopped)
- 1 bunch cilantro (thinly shopped)
- 1 medium size cucumber (chopped)
- 1 medium size jicama (chopped)
- Juice of three lemons
- Salt and pepper to taste
Directions:
Mix all ingredients in a bowl and serve as a side dish or with chips
I will post the recipe for our baked potato soon, meanwhile, I hope you enjoy the lemony flavor on the asparagus and the fresh heat-free salsa.

It all sounds so delicious and the salad sounds yummy. I'm definitely going to have to try it, I love everything that is in it, especially Jicama. :)
